The national dish of Spain is often considered to be the paella, but did you know it comes from Valencia?

Or more precisely, the area around the Albufera Natural Park to the south of the city, where rice is grown using water from the lake.

Traditionally, the paella would be made in a flat pan with rice, spices and any other ingredients local to the region; this could include chicken, rabbit, fish and even rats! Thankfully, rats have long since disappeared from this popular dish.

Latest London lunch: Prison food

Your fingerprints are taken.

You’re going to prison.

But don’t worry, it’s just for lunch.

The Clink Charity opened its third restaurant this week inside Brixton Prison in south London.

The meals are cooked and served by actual prisoners at restaurants located inside prison walls as part of a training and qualification program to help them prepare for life on the outside.

Tips on food and wine matching

At a recent dinner party, I was asked for some hard and fast rules for food and wine matching.

More specifically, my friends wanted confirmation that white wines should be for fish and white meats while red wines are for red meats. If you could only have one rule for food and wine matching, then this would be the one that will give you the highest success rate.

In reality, it is of course much more complicated than that.

Some red wines will work perfectly with fish while some white wines work better with meats. It all depends on a number of things.

The city of Antwerp is probably better known for its harbours and diamonds than its food and drink but there are definitely real foodie gems in this Belgian city.

Like other cities in Belgium, it’s an eclectic mix of the traditional and the modern. On the one hand it’s still producing the century-old Elixir d’Avers amidst a quiet residential street, on the other there’s avant garde Belgian cuisine being created at the likes of the Seppe Nobels restaurant at Graanmarkt 13.
